Fully recommend for dry Sake lovers, the top note is moderate, Umami and sweetness of rice spread roundishly, then the acidity makes aftertaste sharp.
2020 was their 200th anniversary, and Mayuko, who is the 9th generation young female, started to involve brewing seriously.
We highly recommend this label for the people who love dry Sake. It's not just dry; the transition of taste is the most attractive point. The aroma is subtly ricy, and the beautiful sweetness and Umami comes first. Because it's unpasteurized Sake, it's fresh and juicy.
The sharp dryness like a samurai sword wraps the beautiful sweetness and makes the finish very dry like a desert.
