On 24 July, the 10th Omachi Summit took place at the Hotel Grand Palace in Chiyoda Ward, Tokyo. The Omachi is a variety of rice that is native to Okayama prefecture and is known as “Fantom brewery rice.” This summit is a competition of Sake brewed using this rare brewer’s rice. Breweries, farmers, and Omachists, who love Omachi Sake, get together and appreciate specially brewed Sake.
The competition is classified into two classes which are Ginjo and Junmai, and 203 labels were sent at this time.

Omachi brewer’s rice is softer than others and easier to melt in the tank. The production process needs extra care to extract the roundish umami, cleanness, and elegant taste of Omachi. The time of absorbing water has to be counted by minutes, and fermentation also needs to proceed slowly in low temperature. Moreover, labels care about the storing condition got a high valuation.
