Recently, the agricultural institution of each prefecture produces various kind of new brewer’s rice. These challenging activities elevate the quality of Sake.
Contrary to this trend, some visionary breweries and farmers try to restore the old brewer’s rice. Due to its difficult-to-grow characteristic, farmers quit growing some of the old brewer’s rice, even though it produces high-quality Sake.
Harima Sake Project collaborates with Tsubosaka Shuzo and takes a challenge to restore a 100-years-ago brewer’s rice, Benkei. They start this project in the Autumn of 2017 and plan to release the Sake in March 2018. Benkei brewer’s rice has the similar characteristic as Yamadanishiki brewer’s rice has. Can’t wait to taste the old and new Sake!!
