You may think you need to drink it up within a day after you open the bottle. Should you have a concern in your mind, you may hesitate to open it casually. I’d like to share a tip with you. Sake doesn't need to be finished within a day after opening.
Sake is delicate alcohol, but carefully produced artisan Sake maintains its quality for a very long time. It’s said that Sake doesn’t have a limit of consumption if it’s preserved under low temperatures around 0 degrees.
Even though you open the bottle, you can keep enjoying the Sake for at least one week. The taste and aroma change, but it won’t degrade rapidly if you put it in the fridge. *Aromatic and light-bodied dry Sake tends to degrade relatively quickly.
Moreover, oxidation promotes the maturing of Sake, and Sake sometimes blooms on the 2nd day. Especially, unpasteurized Sake has more chances to mature. As you may know, yeasts are still alive in the unpasteurized Sake so the taste changes more rapidly than the pasteurized ones.
Some sake lovers dare to open the bottle and wait for a few days until the Sake blooms.
That is why we don’t need to finish a bottle of Sake in one day. Please enjoy the change of taste slowly.
