UMEBACHEE

In the narrow street just beside Shibuya river, UMEBACHEE is located.
It’s relatively new restaurants offering unique Sake and food pairing. Currently, it’s a bit difficult to secure the sheats, so I recommend you to book in advance. Booking is only available via email or facebook.

They don’t have the Sake menu, they take unique Sake each time and recommend the pairing with the food you order. Their selection of Sake is of cause great, but the fresh chicken sashimi is fantastic.

Every morning, they take the freshly processed chicken and offer very fresh chicken sashimi. Especially, chicken breast strips marinated Kombu kelp(Tori Sasami Kombu jime)is something.

The texture is so creamy and mild. The chicken breast strips wear the Umami of Kombu, and Kombu condenses the sweetness of chicken.

It perfectly pairs with Gikyo aged for ten years. We could luckily appreciate the premium Sake, Hiroki on that day. Pairing is the simmered eggplant. The softly seasoned eggplant don’t break the elegant aroma of Hiroki, and the slight sourness of Hiroki brings the sweetness of eggplant out.

Because they have a lot of Summer vegetable menu, we have ordered some of them like coriander salad and simmered Okura and so forth. The seasonal food has a very condensed and vibrant sweetness and Umami, so it’s very nice to pair with Umami forward Sake.

Lastly, we ordered a chicken sashimi plate. It’s beyond the concept of chicken. On the plate, five types of meat are served, which are breast, leg, liver, heart, and gizzard. Surprisingly, they are all chicken meat, but the taste is entirely different.

The leg is very chewy, and the very pure chicken stock comes out from the skin one bite by one bite. The texture of gizzard and heart proves how fresh this chicken is. Take a look at the color of the breast.

How fresh it is! Once biting the liver, the massive cluster of Umami comes out, and it’s super juicy.

We have paired this chicken Sashimi plate with three different labels, which are Ryusei Tokubetsujunmai, Yorunoteioh Tokubetsujunmai, and Aizumusume Tsurushi. It’s nice to rely on somebody’es choice sometimes.
