NANYO SHUZO

Establish 1860

Nanyo Shuzo is a brewery located in the Tone River basin’s vast countryside in the middle of Kanto plain. Since we founded in 1860, we have been consistently and seriously working on brewing the original Sake.

COMMITMENT

A couple of new generation brewers, along with the younger brother, are the only ones crafting sake at the brewery, and they focus on using traditional methods. The label “Hanabi” represents the sake of Nanyo Shuzo; it is a new brand that blends traditional techniques with the fresh ideas of the young brewmasters. The name “Hanabi” comes from the thought, “Let’s bathe in the sun and let large flowers bloom!”

RICE

We select only excellent brewer's rice from all over Japan. From Hokkaido to Hiroshima, we properly use brewer's rice representing each region. Hokkaido ``Ginpu``, Saitama ``Sakemusashi``, Nagano ``Miyama-nishiki``, Niigata ``Gohyakumangoku``, Hyogo ``Yamada-nishiki``, Okayama ``Omachi``, Hiroshima ``Hattannishiki``

WATER

Saitama prefecture benefits from the Tone River, which has the largest catchment area in Japan. We use pure well water pumped from 200m underground.


SKILL

We aim to produce the highest-grade harmony with aroma and sweetness, researching the yeast thoroughly, then we challenge new recipes day and night.


MIND

Our motto is ``Do things precisely and thoroughly ``. We brew Sake without any compromising.
