SASAKI SHUZO
It’s the only brewery locates in Natori city of Miyagi prefecture. We use local rice and the underground water from Akiho fall, which is one of the most popular three falls in Japan.
COMMITMENT
We’ve damaged by Tōhoku earthquake in 2011, and the brewery collapsed. Back by lots of supporters, we could restart brewing in 2019. We brew the Sake only we can produce with using the local ingredients to return our appreciation for supporters.
PRIZE
・Tohoku Sake Appraisal 2018
RICE
We mainly use the local rice grown in Miyagi prefecture. The most commonly used rice are ``Kuranohana`` and the latest rice ``Ginnoiroha``.
WATER
We use underground water from Akiho fall, which is one of the most popular three falls in Japan. It's very soft water, and it's said that the Sake brewed with the water tends to be very relaxing, and it pairs with foods very well.
SKILL
Due to the damage of the earthquake, we could not have produced Sake for eight years in the same location. During that time, we tried to brew Sake in a temporary facility, which is something like a garage temporarily built in an industrial park for reconstruction.
It's impossible to say ``good environment``, however, we won the Tohoku Sake Apprisal in 2018. Our skill is the mentality of ``never give up``.
