SHIROSUGI SHUZO
The motto is “the delicious rice produces the delicious Sake”. We are the one and only brewery brewing Sake with only using edible rice.
COMMITMENT
We produce original Sake no other people can produce in my home town. The combination of edible rice and black Koji makes the one and only taste. The black Koji creates a strong body and clear sourness. The taste is heavier and richer to compare with white Koji.

RICE
We brew Sake with only using edible rice. Kyoto is the excellent area to produce the branded edible rice, like Koshihikari, Sasanishiki, Milky queen, and so forth.
WATER
We have a well in the brewery and it's super soft water. The hardness is 9.7mg/l.
SKILL
They are confident of producing the Koji rice and believe the difference of Koji rice makes the characteristic.
Especially, they are the specialist of black Koji, which is generally used for brewing Awamori(Okinawan Shochu).
MILD
