The No.5 yearly production yield of Japanese brewery rice
The Akitasakekomachi in Akita local brewery rice started breeding in 1988, and after 10 years it was named “Akitasakekomachi”.
Akitasakekomachi is very popular among local sake breweries. In 2015, the production yield was 2,408 tons, ranked as the No.5 for all Japanese brewery rice. It increased production yields to 2,672 tons in 2016 and ranked No.4.
The Akitasakekomachi has the brewery rice character like low protein concentration and high polished rate that is suitable for premium sake. The sake produced by Akitasakekomachi has an elegant aroma, umami flavor, and a long and varied aftertaste. That’s why more and more sake breweries want to use Akitasakeomachi as a material.
