The Ibaraki Local Brewery Rice
Hitachinishiki is the first brewery rice bred in Ibaraki. The main brewery rice planted in Ibaraki is Miyamanishiki, but it is prone to falling in this area. The Ibaraki Sake Brewery Association asked for a new strain of brewery rice for local sake breweries.
Hitachinishiki was bred from 1991 and completed in 1998. Although Hitachinishiki is tall, it is strong and hard to topple. It also exhibits brewery rice characteristics like large particles, low protein content, and is easy to find Shimpaku inside.
The sake produced by Hitachinishiki has a clean texture and delicate aroma.
