Junmai is a grade of sake brewed with only rice, koji, water, and no additional distilled alcohol. Junmai sake presents a stronger and richer mouthfeel than other grades of sake. It holds a special place in Japanese culture.
Before 2003, Japanese law stipulated that Junmai must use polished rice below 70% for material. No specific polished rice is required, but the polished rate of rice must be displayed on the label.
Junmai sake allows you to taste the difference in rice, water, and brewing technique of Toji. Most sake breweries aim to brew Junmai with their own unique characters using different rice and brewing methods.
