The Seasonal Sake Including a Little Sake-kasu
In the sake brewing process, the fermentation mash will separate to sake and sake-kasu. If we use large mesh in this step and make sake include a little sake-kasu and make sake turbid, we will call it "cloudy sake" (にごり酒).
Some sake breweries will control the content of sake-kasu and make it not so turbid, and this kind of sake is called "Origarami" (滓絡み, おりがらみ).
The Origarami will see the remaining sake-kasu in sake and make it a little cloudy.
The Origarami is usually bottled in the form of "Nama Sake". It will have a fresh and strong umami flavor, a little bit sparkling taste. It is quite balanced and easy to drink.
