The Local Brewery Rice of Saga: Saganohana
Saganohana is one of the local brewery rice varieties of Saga. It was bred by two famous brewery rice varieties, Yamadanishiki and Wakamizu.
Saganohana is suitable for producing Junmai with a strong mouthfeel, rich sweetness, and umami flavor. Some sake breweries try to polish Saganohana below 60% for brewing Tokubetsu Junmai or Junmai Ginjo in recent years.
By the way, “Saganohana” means “the flower of Saga.”
