The Shimane Brewery Rice Looking Forward to Produce Sake
Sakanishiki is Shimane local brewery rice. It was first bred by Shimane Agricultural Technology Center in 1985 and was completed in 2004.
Sakanishiki was created by crossing "Hattannagare" and "Kinmonnishiki", two dreamy brewery rices, and "Hattannagare" also has the gene from "Omachi". Sake breweries have high expectations that Sakanishiki will produce fine sake.
Sakanishiki is an early line and the rice particle is larger than Gohyakumangoku. It has the character with low protein content and smaller Shimpaku, not easy to break at high polished rate. Sakanishiki is suitable for producing premium sake.
The name Sakanishiki comes from the temple for the god of sake "Sakajinja (佐香神社)" located in Shimane.
