An Estate-Brewed Junmai from Gose, Nara
Crafted by Chiyo Shuzo in Gose, Nara Prefecture, the Kujira (櫛羅) series is a limited-label sake brewed exclusively with estate-grown Yamada Nishiki rice cultivated in the brewery’s own fields. Sown and brewed by the hands of the kurabito themselves, this sake expresses the pure essence of Kujira terroir. This edition uses a polishing ratio of 66%, showcasing a rounded, umami-rich profile with a fresh and balanced finish—amplified by the energy and texture only a muroka nama genshu can deliver.
🌟 Product Highlights
🌾 100% Estate-Grown Yamada Nishiki × A True Local Sake
This sake is brewed entirely from Yamada Nishiki rice grown by the brewery itself in the Kujira region. A true “jizake” (local sake), it embodies the authentic taste of the land and rice.
🍶 Yeast No. 9 × Clean & Dry Character
Fermented with Association Yeast No. 9, known for its stable fermentation and refined aroma. The result is a bright, dry sake with a subtle effervescence and a clean, refreshing finish.
🧊 Muroka × Nama Genshu × Naturally Effervescent
Unpasteurized and unfiltered, this Junmai Nama Genshu retains the full natural flavor and active yeast of its fermentation. It delivers a faint natural carbonation that adds lift and liveliness—perfect for food pairing.
📏 66% Rice Polishing × Crisp Umami Balance
Polished to 66%, this version preserves the essence of the rice while boosting drinkability. High acidity, high alcohol, and a bold sake meter value give it a sharp and satisfying aftertaste.
