A challenging creation by master brewer and brewery owner Toshiharu Imai, this is the pinnacle of the “Super Dry” series — the limited-edition Nijiiro Bakuren.
Super Dry Alert
Crafted in line with Kame-no-I Shuzo’s philosophy of “creating demand,” this sake was boldly brewed to further explore the appeal of ultra-dry ginjo and open new frontiers. Using Ogawa yeast and Dewanosato sake rice grown in Haguromachi, Yamagata Prefecture, it delivers a luxurious muscat-like juiciness and a tropical mango richness, with a glamorous grapefruit-like aroma.
The palate is smooth and flowing, with fruity notes, abundant umami, and an unexpectedly sharp, clean finish — a harmony as beautiful as a rainbow. Like a large, beautiful rainbow that appears in the sky after rain, this sake carries the wish for a peaceful, rainbow-filled world.
Breaking the Bakuren series record for the highest rice polishing ratio, this is the first appearance of a top-class 33% daiginjo. The flavor is free from any off-notes, combining elegant sake quality with a crisp, powerful, dry finish. It embodies a bold, refreshing super-dry style, yet surprisingly carries soft fruit acidity and a delicate texture. A must-try example of Kudoki Jozu’s skill in crafting a lively yet rich “umami super dry” sake.
