This junmai daiginjo, brewed using the kimoto method in the depths of winter, takes more than twice the time of our usual ginjo brewing. This slow and deliberate process allows the natural microorganisms of the brewery, the rice, and the water to fully express their potential.
It offers a faint, fermentation-derived effervescence, a refreshing aroma reminiscent of green apples, and a gentle spread of sweetness and umami. The finish is pure, quiet, and dignified — a sake of clarity and grace.
