A new release brewed with Nanatsuyu, Nara Prefecture’s newly developed sake rice.
This Junmai Ginjo is crafted using a dual-yeast fermentation with Akitomo (Akebono/Meiri) yeast and Kyokai No. 7 yeast. The gentle, rounded profile of Meiri yeast is enhanced by the crisp, sharp acidity of No. 7, resulting in a refreshingly juicy and vibrant expression.
Distinct from the usual Shinomine style, this sake showcases the refined ginjo aroma unique to the Rokumaru series, complemented by clean, lively acidity and an elegant finish.
