It is crafted using a traditional yet innovative technique known as the high-temperature saccharification Yamahai method. By initiating the yeast starter (shubo) at higher temperatures, this approach allows Yamahai sake to be produced more efficiently and with greater stability.
While Yamahai sake is often associated with pronounced acidity and complexity derived from lactic acid, this expression offers a cleaner, lighter body and texture. It is also an unpressed sake, bottled from the naturally dripping first run (shizuku), resulting in a lively, fresh, and gently effervescent character.
You can truly feel the vitality of living yeast. Juicy sweetness and umami burst forth with the bubbles, while the finish reveals a soft spread of creamy acidity and delicate sweetness.
