Yamana Shuzo “K” Kimoto Junmai Genshu is an ultra-dry, limited-release sake with a remarkable SMV of +17.
Brewed from 100% Hyogo-grown Yamadanishiki rice polished to 80%, it preserves the grain’s natural depth and umami.
Traditional brewery-native yeast and the labor-intensive Kimoto method bring complexity and character, while a full year of low-temperature maturation in the brewery refines the sake into a beautifully structured and exceptionally crisp expression.
Best enjoyed well chilled, where its sharp dryness and refreshing finish truly shine.
