Brewed from Kame-no-O rice polished to 70%, using Kyokai No. 6 yeast, this sake is crafted with white koji in the yeast starter and without the addition of lactic acid.
It offers a delicate and refreshing aroma. On the palate, lively freshness is accompanied by bright citric acidity and layered umami, creating a harmonious balance with a clean, crisp finish.
The citric acid naturally produced by the white koji is used to adjust the initial pH of the yeast starter, eliminating the need for added lactic acid during the brewing process. This unique method results in a sake that is both expressive and refreshingly elegant.
