Created exclusively by Yamana Shuzo of Hyogo Prefecture in collaboration with SAKEMARU, “adagio” is a remarkable tea-infused sake shaped by time, maturation, and extraordinary depth of flavor.
For this limited creation, the brewery selected precious Gui Fei Oolong harvested in 2013 and matured for more than a decade. The aged tea leaves are gently infused in sake over several days, allowing their deeply evolved aromas to slowly integrate into the sake.
Fine, refreshing bubbles bring lightness and definition to the profound character of the aged tea, creating an exceptional balance of depth, texture, and elegance.

Carefully selected by Ji Ming Tea, this Gui Fei Oolong was harvested in Shanlinxi in 2013 and slowly matured for more than a decade.
Harmony of Flavors
Gui Fei Oolong develops its distinctive honeyed character naturally through the interaction of tea leaves with the tea green leafhopper. This creates aromas reminiscent of ripe fruit, lychee, honey, and citrus, which become deeper and more restrained through years of maturation.
Fine natural bubbles dance gently across the palate, while the aged oolong’s deep woody character merges seamlessly with the umami of sake, creating remarkable dimension and an exceptionally long finish.

Palate
Fine bubbles gently dance across the tongue before rich notes of pomegranate, lychee, ripe fruit, and honey gradually expand across the palate. The clean, refreshing character of high-mountain oolong then meets the rounded umami of sake, merging seamlessly into a silky, fluid texture.
Finish
The finish is exceptionally expressive. The depth and composure developed through more than ten years of tea maturation slowly unfold, leaving a long, elegant aftertaste with gentle tea tannins and a lingering sweetness.

Ideal Temperature: 8°C–12°C
Best served lightly chilled. At lower temperatures, the fine bubbles and crisp character of the high-mountain oolong become more pronounced. As the sake gradually warms in the glass, the deep honeyed aromas and lingering character of the 2013 Gui Fei Oolong begin to open and reveal their full complexity.
