Apples are one of the most popular crops. This is the label featuring apples and the freshness and sourness is the key characteristic. The yeast "No.77" which generates a lot of malic acids is used to brew this label. The aroma is just like green apples and there is a nuance of white flower.
The first impression is very neat and clean, full of freshness. ABV is only 12% so the attack is very light but there is full of juicy umami because it's undiluted Genshu style. The balanced umami is hidden behind the umami and the sharp and peculiar malic acids create the shape of taste. It tastes like white wine but the umami stands out very much, persist the identity of sake. Let's chill it well and enjoy with the wine glass.
