It has a fruity aroma reminiscent of lychee and a gentle sweetness characteristic of Azumatsuru.
This sake is brewed using a variety of rice called "Shunyou". Shunyou rice grains are larger, allowing for a reduction in the amino acid content that causes off-flavors.
Even without significant rice polishing, a Sake as pure as Daiginjo can be produced. We have introduced a special limited-edition unpasteurized Sake version this time.
It possesses fruity aromas similar to lychee, white peach, and green grapes, while maintaining the mild sweetness unique to Azumatsuru, and it also features a refreshing characteristic, making it exceptionally smooth to drink.
Its fresh bubbly sensation and acidity make it an excellent choice for pairing at the dining table. You can enjoy this sake at the table just as you would enjoy a white wine or sparkling wine.
