The Modern Senkin is the fruity and sour, modern type brand. The Classic Senkin is the gentle aroma and Umami forward type of Sake on the other hands.
In 2019, Senkin started to brew the Classic label with Kimoto method. The taste is creamier and richer than the modern type. The best temperature is room temperature to 35 degrees. The sophisticated sourness turns into mildness, and we can appreciate the sophisticated Umami more obviously.
