We have commercialized the domaine-style approach, in which we consistently produce sake from rice cultivation to brewing through our own cultivation. The original Sake is blended with about three types to give it a light and lively finish. It's a Sake you can enjoy casually.
Watanabe Shuzo started cultivating its own brewer's rice in 2003. Today, they grow rice on 15.4 hectares of paddy fields. Cultivating rice with the soil and water of Nekochiya and brewing sake with well water, they are committed to the "domaine-style" where everything is covered within Nekochiya.
Given the overall aging of the community, taking over paddy fields ensures that no land is abandoned, which protects the land and becomes the key to producing delicious rice.
Also, nurturing from the rice allows them to understand the year's climate and rice quality, a unique feature of cultivating in-house. We would be delighted if our Sake serves as an opportunity for you to get to know Nekochiya.
