NEXT FIVE is a collaborative unit of five distinguished breweries from Akita Prefecture, one of Japan’s most renowned sake regions, led by the prestigious Aramasa. This is the final work marking the culmination of their 15-year journey.
This sparkling Junmai Daiginjo, made using secondary fermentation in the bottle, features an intense effervescence. It is crafted with Misato Nishiki rice grown by Yamamoto Brewery in Akita and polished down to 40%.
The koji rice was produced at the Yukino Bijin facility, while the Kimoto brewing method was a joint effort with Harukasumi. The brewing process itself was handled by Ichiroseisen.
Savor this rare masterpiece, a collaboration of Akita’s finest, as a fitting finale to NEXT FIVE’s legacy.
