The Aramasa 2025 Limited Release – First Edition: Akane Kujaku & Hinotori is a special edition sake set released by Aramasa Brewery (Akita Prefecture) in 2025.

Centered around two iconic kijoshu (re-brewed sake) expressions—Akane Kujaku and Hinotori—this release showcases Aramasa’s experimental spirit and relentless pursuit of flavor refinement.

A. “Edible” Hinotori – 400ml

Crafted using locally grown Akita rice and Aramasa’s proprietary No.6 yeast strain, this is a kijoshu-style sake that blends sweetness with elegant umami. It features delicate fruity and floral aromas, a silky texture, and a rich sweetness that is never cloying. The finish is smooth, warm, and lingering.

B. Akane Kujaku – 500ml

Made from Akita-grown rice, this robust kijoshu balances concentrated sweetness with bold acidity. The full-bodied profile is layered with notes of candied fruit, dried fruit, honey, and tropical fruits. On the palate, sweetness and acidity interweave harmoniously, leading to a long and complex finish. A sake full of character and intensity.
