The Aramasa 2025 Limited Release – Send Edition: Hinokotori 2024 Spark & Karura is a special edition sake set released by Aramasa Brewery (Akita Prefecture) in 2025.

This year’s theme, “The Ultimate Hinotori Encyclopedia,” features head-to-head matchups: Hinotori vs. Akane Kujaku, Hi no Tori vs. Kuro no Tori, and finally Hinokotori vs. Karura.

Hinokotori 2024 SPARK (8%)

marks the first low-alcohol version in the Hinotori series, achieving perfect balance through in-bottle secondary fermentation and careful pasteurization after oribiki (lees removal).

Karura 2024 (13%)

is brewed with the rare Rhizopus mold—more common in tempeh and Shaoxing wine than in sake—creating a bold, complex, and age-worthy expression inspired by the mythical bird Garuda.

Both are exquisite kijo-shu styles crafted exclusively for this event, offering deep, layered flavors and an artistic glimpse into Aramasa’s boundary-pushing philosophy.
