EikohFuji locates in Yamagata prefecture and rapidly gaining attention. The most unique point is the wide variety. They release a new label every month, and most of them are unpasteurized limited edition. The brewmaster is passionate about challenging new brewer's rice every year.
This label is produced with Miyamanishiki. The top note is fresh & fruity like a melon and banana. Once sipping it, the moderate sweetness comes in, and the mild sourness gradually wraps the sweetness and Umami gently.
Yamagata's local yeast produced a beautiful finish.
