The Three Waves of Taste: Starting with Its Natural Flavor.
The aroma is soft and subtly sweet, influenced by the rice. As you hold it in your mouth, the aroma gradually becomes milder and creamier. Following the aroma, you'll feel the thick and sophisticated umami flavor on your tongue. The aftertaste doesn't last long, fading away comfortably and quickly.
The clean aftertaste is likely due to the use of super-soft and transparent groundwater. Furthermore, the production process for this sake is unique. Typically, breweries use a single barrel to produce Shubo, gradually increasing the volume of rice, Koji, water, and yeast to facilitate fermentation.
Please savor this Sake slowly and appreciate the three waves of taste it offers, starting with its natural flavor.
