The Hattannishiki rice offers a sharp and dry flavor, yet it leaves a lasting aftertaste of rich rice flavor. It is crafted using the "soft water brewing method" traditional to the Seto Inland region, which allows the koji to develop fully, providing a gentle yet lingering taste that appeals widely.
This Sake pairs wonderfully with a light Seto Inland fish hot pot, allowing for endless eating and drinking. Enjoying white fish Sashimi with just salt and citrus is also a great choice. The simple Umami and texture of the fish beautifully complement the lingering aftertaste of HOKEN Sake.
