This label was adopted for the Sake of toast in G7 Summit Sherpa in 2016. Isojiman is one of the most prestigious breweries in Japan, and it’s well-known as the brewery that produces the finest Daiginjo.
The brewer’s rice used for this label is Yamadanishiki grown in “Tojo Akizu 東条秋津” area where grows the best of the best Yamadanishiki in the world. Moreover, it’s polished down to 28%!
To carefully grow the Sake it took about 50 days which is almost doubled to the normal process, and it’s squeezed without any pressures. The Sake naturally oozes out with its weight by using the meshed bags.
It’s time and labor-consuming Sake.
The characteristic is just like a genuine princess full of grace. The aroma is fruity, like luxurious melons, but not too gorgeous. The attack is clean and smooth like the spring water. What’s remarkable is its fine-grained umami, which gradually spreads all around your mouth.
It isn’t easy to categorize this Sake for light-bodied Sake with this characteristic.
The off-taste is almost zero. The pure and beautiful sweetness and the balanced sourness are marvelous.
