It's one of the most avant-garde Sake of Aramasa, only produced 1740 bottles. It's produced with white Koji, and the acidity reached 5.0, which is more than three times higher than the regular Sake.
It's much higher than Amaneko because most of Koji rice is made with white Koji. It's remarkably produced by the traditional Kimoto method and fermented in the 130 years old cedar barrel. It's aged for two years.
