Benkei is a brewer's rice used from the Taisho period to the early Showa period.
As Yamada Nishiki became famous, production started to decrease.
Benkei brewer's rice is slightly troublesome for brewing, but the skilled brewers can bring out its high-quality Umami. The top note is akin to a green apple. There is a slightly fizzy texture, the density of sourness and sweetness is thick, and the refreshing and pleasant bitterness is a good accent and makes the layers of taste.
The Kimoto Sake, brewed carefully, has crystal-clear transparency, and the sourness brings out the good points of the cuisine exquisitely.
