Nishiwaki Farm's Yamada Nishiki rice, which is cultivated without chemical fertilizers and reduced pesticides, is polished down to 60% and brewed with the traditional Kimoto method to bring out the Umami of the rice and the sourness of the natural lactic acid bacteria.
This time, for the first time, they tried the combination of Ginjo Miyagi yeast and Yamada Nishiki.
You can feel the nuances of green fruits in the first attack, the scent of Japanese pear unique to Ginjo Miyagi yeast, and the light and refreshing taste are well-balanced. The aftertaste is short and soft, and you can feel the clearness.
