The new Juyondai produced with Hakutsurunishiki, which is the giant brewery Hakutsuru Shuzo.
It is brewed with Hakusuru Shuzo's own brewer's rice, Hakutsurunishiki, and the production is very small. It's polished down to 45%; the taste is clean and transparent. It is a very high-grade Ginjo aroma.
The grade of Hakutsurunishiki is the same as that of Yamadanishiki, the king of brewer's rice. The Sake has rich in flavor and dense in taste. It has a fresh aroma of melon, green apple, and citrus with a long finish.
