Aiyama is rare rice called the fantom brewer's rice; sometimes, it's described as jewels owing to its excellent taste. This Junmaidaiginjo is produced by Aiyama, polished down to 50%.
Like the competition edition, careful processing and low-temperature fermentation make the gorgeous and exotic aroma and taste.
The slight fizziness influenced by Muroka, Nama, Genshu, and the beautiful pineapple-like aroma is awesome! The clean and light texture is delightful.
