As part of the brewery’s philosophy, “Brewing sake that brings satisfaction to the heart,” we reflect on what it is that makes the heart truly satisfied.
What efforts are needed to achieve this? This series was conceived from questions derived from this philosophy, with the aim of exploring the values behind the titles: “Identity,” “Adapt,” “New Sensation,” and “Blue Sapphire,” focusing on the theme of Chiba Prefecture.
Kankiku Brewery incorporates various concepts using brewer's rice from across Japan. In addition, they have gained new understanding of locally sourced brewer's rice, highlighting the value of their local sake brewery.
The value is especially showcased when paired with seafood from the Kujukuri coastal area. The goal of “Identity” is to emphasize the body of the sake while suppressing its aroma. It is particularly recommended with mackerel or shellfish sashimi.
