This year's first new Sake! A bottle to celebrate the glorious beginning of the season. It has depth and is a sober Junmaidaiginjo that gently accompanies the cuisine.
ALBA is Italian for Dawn, Sunrise, or Beginning. It's an image of clear air like the dawn of winter that comes out first in the new brewing year.
Yamadanishiki is polished to 50% and slowly fermented at a low temperature to create a beautiful fragrance that is not too flashy; it pops up as soon as you open the bottle.
Bottling immediately after squeezing allows you to enjoy a pleasant taste while leaving a slight fizziness. The soft, clear taste and the simple Umami of the rice that comes after are a perfect match with various types of dishes.
