Founded in 1764, Kinsuzume is the oldest brewery in Yamaguchi Prefecture and currently ranks as the region’s most popular sake. By blending traditional brewing techniques with modern innovation, KInsuzume produces a diverse range of sakes that have won numerous awards at international competitions. A Perfect Balance of Tradition and Innovation
Kinsuzume Hisho stays true to traditional sake brewing methods while boldly exploring new possibilities. It has twice won the highest honors in the Junmai Daiginjo category at the International Wine Challenge (IWC) , and recognized as the world’s best sake two years in a row.
Brewed with pure spring water from the source of the Nishikigawa River, the sake undergoes a slow fermentation process at low temperatures. When the moromi mash releases its aromatic fragrance, the sake is gently extracted using a natural drip method from suspended sake bags, known as shizuku-shu.
The result is a sake that is fresh and juicy, with a vibrant fruity aroma. Its exquisite balance between acidity and a lingering finish is truly exceptional, making this Sake a masterpiece in the world of sake.
