Using a unique aging process, it's a Junmai Daiginjo characterized by its fresh and elegant aroma and flavor. It was named after the first-generation brewery owner, 'Nizaemon'.
The first impression is of a poised and refined image. One can sense the fresh lemon, juicy melon, and the sweet white floral aroma of gardenia. The latter half is reminiscent of the refreshing spice of juniper berries, emitting a radiant aroma with clarity resembling that of a crystal.
It transitions swiftly from a mild touch to a dry impression, but there's a robust core with viscosity from the tip of the tongue to the center, clearly conveying the progression of flavors to the drinker from the mid-palate onwards. The latter half offers a citrusy aroma accompanied by a moist, gentle kindness, showcasing a sake with distinct highs and lows in its profile.
