This Junmai Daiginjo is brewed using super hard water (hardness 148 mg/l) and Saitama rice, fermented at low temperatures using the skills of Nanbu Toji. It retains both aroma and umami, resulting in an extremely dry sake.
Despite its calm demeanor, the aroma is fruity. It skillfully balances the opposing elements of dryness and umami, providing a crisp and refreshing experience that you won't tire of.
Recommended to be served chilled in a wine glass.
