In spite of Junmaidaiginjo, aroma is gentle but its sweetness is elegant and sophisticated, since this brewery commits to produce sake for pairing with foods.
As soon as opening the bottle, the soft and fresh scent spread in the air. The attack is smooth and gentle which is not like Yamahai.
But, jucy umami gradually grows and sourness like citrus fruits and bitterness like grapefruits spread all round the mouth. The most remarkable point is its sweetness which is like the perfectly designed sophisticated Japanese traditional sweets.
The sweet and sourness aftertaste reminds of a sweet dried grape. And it doesn’t last long.
With regard to drinking temperature, chilled is of course good, however, SAKEMARU recommends to warm it until 35-40 degrees.
Please just forget the common sense that Junmaidaiginjo has to be drunken chilled.
The sourness influenced by Yamahai method turns to be very milky and creamy with adding heat. Its creamy and sweet taste is very difficult to describe but purely beautiful.
