A kijoshu with lightness and refreshing qualities, setting itself apart from overly sweet kijoshu. A truly elegant sake.
The first “Kijoshu” in the 85 series, born from the combination of two classical techniques: the “Kimoto” and “Kijoshu” methods. During the Kijoshu brewing process, the sake used is also a Kimoto sake brewed from the same type of rice.
This kijoshu strictly follows the 85 production standards, featuring a gentle acidity and a well-balanced, honey-like rich sweetness. Despite its extremely sweet flavor profile, it remains refreshing without becoming cloying.
