This Junmai sake uses the new “Akita Konno IY-3” yeast, offering a refreshing herb-like aroma and juicy umami!
It retains the umami characteristic of Junmai sake, with a clear taste free from off-flavors. Bottled immediately after pressing, it maintains an exceptionally fresh state.
The sake features a slight effervescence, straightforward and juicy sweetness, and lively acidity. The finish is light, with a fresh herb-like astringency and bitterness typical of a new sake.
