The brewers have focused on 'Sourness' as their theme. The initial note is sweet and fresh, reminiscent of yogurt. The attack is rich and mild, heavily influenced by the Yamahai method. The flavor is quite rich, imbued with a significant umami characteristic of Omachi brewery rice. Despite its richness, the finish is clear and crisp, marked by a surge of sourness towards the end.
This crystal-clear transparency is achieved through the use of classic yeast No.6, which also influences the Sake's flavor profile. The design philosophy is well-reflected in its taste. Furthermore, by exclusively using Omachi brewery rice from Setocho, known for producing the finest Omachi, the sake presents a powerful yet sophisticated character.
