This sake is brewed using Mie Prefecture’s yeast strain “MLA-12,” known for its high production of malic acid. This season, the koji mold was adjusted to create a lighter style, resulting in a drier profile compared to last year. It features a refreshing acidity, complemented by a subtle banana aroma.
To balance the high acidity, a touch of residual sugar remains, focusing on the harmony of sweetness and acidity. Additionally, the low alcohol content provides a light and refreshing drinking experience.
