The height of Umami, Number 8 of the Taxi driver, brewed by the yeast "Yuko no Omoi"
Taxi driver numbers each barrel, since they change the ingredient and brewing method by barrels. This number has no consistency throughout the years so that the taste of the Taxi driver is different by barrels and brewery years.
This label is Taxi driver #8. It's brewed by using yeast "Yuko no Omoi", which is the local yeast of Iwate prefecture and generate strong Umami.
The aroma is moderately mild, and there is a nuance of grapefruits in its end. The attack is gentle, but the large cluster of Umami vibrantly steadily spread out.
Roundish sourness balances with the Umami and leaves a refreshing feeling.
