This is a challenging label the young female brewmaster brewed in her 2nd year. The ingredient is the local Miyamanishiki. They tried to brew sake which makes people feel the beautiful mountain and crystal clear river of Nagano Pref.
The top note is fresh and fruity like young apple. The texture is very light and clean, the softness of water is distinguished. The core of taste is the silky sweetness influenced by the rice. Being coupled with the aroma. the feeling is like drinking the apple juice, however, the characteristic of sweetness is too heavy and doesn't last long.
It's easy to see her passion for producing the premium sake with using the local Miyamanishiki. It's said that Miyamanishiki is too hard and difficult to melt. By polishing it by 45% and bottle only first and middle part of sake, they tried to make the taste extremely clean and smooth.
